  What are micro-greens  exactly?

They are tiny power packed versions of vegetables, herbs  harvested anywhere from a week to two after germination that tend to be about one to two inches long with the stem and leaves still attached.

The micro-greens were four- to 40-fold more concentrated with nutrients than their mature counterparts,” say researchers at the University of Maryland. “When we first got the results we had to rush to double and triple check them.  Among the 25 micro-greens assayed, red cabbage, cilantro, garnet amaranth, and green daikon radish had the highest concentrations of ascorbic acids, carotenoids, phylloquinone, and tocopherols, respectively. In comparison with nutritional concentrations in mature leaves (USDA National Nutrient Database).

This program will educate about the benefits of sprout farming, provide a starter kit, and provide tools and resources enabling individuals and groups to become self-sustaining farmers.

Studies will be conducted with malnutrition-ed under the supervision of doctors and nutritionists.

The results will be shared in real time in an open and transparent platform.

Financially sustaining and replicating designs will be developed and cooperation extended.
